ABC - Panettone Muffins

Happy New Year everyone!

I hope everyone is ready for another year of ABC. This year is different in that we're not baking from a book, but rather from the King Arthur Flour website. The first recipe this year is the Panettone Muffins. I've only had Panettone once when my friend Jenn (Knitty Baker) and I decided to do a virtual bake-together. I liked it a lot so when I saw this muffin variety on the KAF website, I knew it had to be on the ABC recipe list.

Because we already have some leftover dessert, I decided to make just half the recipe. Given the weight measurements in the recipe (a feature I really like a LOT), that's really easy to do. Or so I thought... I typically write out the adjusted recipe on a piece of paper so I don't mess up the math. Today I was in a hurry (you probably already know where I'm going with this). I did the math on the fly and then this happened: half the butter plus the full amount of sugar (I should have listened to that voice that told me, that's a lot of sugar for that little bit of butter):

I had two choices: start over or add more butter and make the full recipe. I decided to start over. I could always use up the "buttered sugar" when I make my regular bread. Other than this mishap, the batter came together easily and quickly (assuming you have the dried fruit ready to go). For the dried fruit, I used this Dried Fruit Mix I had. I believe it has: dark and golden raisins, cranberries, papaya, and pineapple. My liquid of choice was apple juice.

Final thoughts:

  • My husband liked these. He had half of a muffin while still slightly warm and said it was moist and flavorful. He gave it a 9 out of 10 rating. Score!!
  • I ate the other half and really liked it too. I was pleasantly surprised by how tender it was. I just loved the texture! Since I didn't have Fiori di Sicilia, I used the zest of a small orange instead. The fruit was plump and sweet. A really nice combination of flavors.
  • Baking time for me was about 21 minutes.
  • Changes: substituted Egg Nog for the milk, reduced the sugar to 43 gr to account for the sugar in the Egg Nog, added 1/4 tsp of cinnamon to the batter, added the zest of one small orange.

    Your muffins looks lovely! Using egg nog is very interesting, have not seen egg nog over here, though I have kept a lookout for these for quite some time! And I've use orange oil instead of Fiori di Sicilia. This is a great pick, Panettone has always been on my list of to-try!

  3. Hanaa, your pannetone looks great! Glad to hear this is a hit with you and hubby. I'm so happy I join ABC and look forward to more baking :). you are always very creative in substituting ingredients. What a great idea to use orange zest. Fiori di Sicilia is super fragrant - almost perfumy. I would have to try making a different pannetone to use it again.

  4. I love the idea of egg nog for substitute! I was out of milk and used half and half but I did have some egg nog and never thought. Very creative! I used orange juice with my craisins and the zest of one lemon. I got a nice citrus flavor instead of the FdS. Looks yummy!

    I'm still waiting for my package from KA, after reading some reviews I overcame my stinginess to order Fiori di Sicilia (had to throw in a New England hotdog bun pan to make the shipping costs worth while.

  8. Interesting using the egg nog! I have seen some people sub a combo of vanilla and orange oil for the fiori with success. I do have it and a very little bit goes a long way. I think I ordered it when KAF had free shipping. Beautiful post!
