ABC - January 2017: Spinach Sheet Pan Quiche

Happy New Year everyone!! We're starting the ABC year with a new recipe source. After a voting poll on Facebook, the Smitten Kitchen blog got an overwhelming response from our ABC bakers.

To change things up, our first recipe is a savory one: Spinach Sheet Pan Quiche. When I saw this recipe, it reminded me of a spinach quiche I enjoyed for lunch a couple months ago, at a French restaurant.

The recipe was cut in half and baked in a Pyrex 8" x 8" pan. As you may notice in the picture below, I made a crustless version. One of our ABC bakers on Facebook, Dian, baked a crustless version of the quiche earlier this week, and that's where I got the idea from :)

ABC - Easy Peasy Cheesy Cookies

This June challenge for ABC was something I've always wanted to try: savory crackers. Although the recipe is called Cheesy Cookies on the Weekend Bakery blog, they're really crackers in my book. The dough comes together really quickly in the food processor (yes, "easy peasy" indeed).


I added some interesting spices to kick things up. Instead of rolling out the dough and using a cookie cutter, I went a different route (it was also VERY hot in my kitchen as the AC was out of service). Inspired by these tiny savory Moroccan crackers called "Petite Fekkas Sale", I decided to shape them like that instead. They baked up in less time also which was a plus (remember, no AC!).

ABC - Savory Cheddar Chive Scones

Scones don't always have to be sweet. So when a King Arthur Flour employee recommended the Cheddar Chives Scones to me, I knew I had to give them a try. I knew I'd be pleasantly surprised. I still remember making my first savory muffins (caramelized onions - check, sage - check, cheese - check). They were amazing. No wonder they're in the top 3 of popular blog posts on Hanaa's Kitchen.

I picked this recipe for the month of June because I knew I'd have fresh chives in my garden by then :o) I loved walking over to my garden and snipping a bunch of fresh chives. They smelled so good!
