Heavenly Cake Bakers made these cupcakes a couple weeks ago. It was the weekend of my return from vacationing overseas which meant that even if I wanted to bake, I really shouldn't until I was completely over my jetlag. This week, the HCBers are making a coconut cheesecake and since I'm allergic to coconut, I figured this was the perfect opportunity to rewind and try out this chocolate cupcake recipe. Since there is no frosting specified for it, or at least, not that I saw, I decided to use up leftover Chocolate Cream Cheese frosting I had in my freezer (it's a frosting I concocted a while back, while trying to come up with an alternative to "regular" cream cheese frosting).
The batter looked super chocolaty and was satiny smooth.

Final thoughts/tips:
- Hubby and I enjoyed these cupcakes. They're tender, with lots of chocolate flavor (a little too chocolaty for hubby), although we found them to be a tad dry. This surprised me a bit because I had substituted 2 Tbsp of butter with canola oil to avoid just that. Oh well... they're still super tasty.
- To enhance the chocolate flavor, I added 1 tsp of instant espresso powder by Mediaglia d'Oro.
- Since I planned on taking these cupcakes to work, I made them slightly smaller and ended with 20 instead of 16.

Thank you very much for your nice comments. The funny thing is that I got tired of piping stars on each cupcake, that I just swirled the frosting on top and quickly topped it with 3 shells :o)

ReplyDelete@Mendy: yes, I usually sub some of the butter with oil and find the outcome a bit more moist than with butter alone. Try it and let me know what you think.
