It's that time of year again: World Bread Day as organized by Zorra from the wonderful food blog, Kochtopf (thank you, dear!).
This year I bring you a quick and easy no-knead "liquid brioche" recipe. When I first saw it on YouTube, I couldn't believe it would work but sure enough, it did. Basically, the bread dough is a very thick batter that requires no kneading; just a bowl and a spatula (no fancy mixers). It goes from mixing straight to a cake pan to rise until doubled in volume. After brushing on an egg wash, you sprinkle some flax or sesame seeds on top, and into the oven it goes. It couldn't be easier! It's great with butter and jam, or to make sandwiches, to eat with tajines, dip in extra-virgin olive oil, etc.

- 150 gr lukewarm milk
- 22 gr olive oil or soft butter
- 2 gr salt
- 10 gr sugar
- 1 large egg
- 6 gr instant yeast
- 200 gr all purpose flour
- Egg wash: 1 egg yolk and 1 Tbsp milk
- Optional for sprinkling: 1-2 Tbsp flax seeds or sesame seeds
- In a medium sized bowl, combine the milk, oil/butter, salt, sugar, and egg. Mix well until homogenous.
- Add the yeast and mix well to incorporate into the liquid mixture.
- Add half of the flour to the liquid mixture and mix well with a spatula until absorbed into the liquid mixture. Now add the remaining half of the flour and mix well until everything is well combined and there are no traces of flour left. Make sure to scrape the sides of the bowl as well.
- To prepare the cake pan, grease the bottom and sides of an 8" round cake pan. Cover the bottom with a round piece of parchment paper.
- Pour the "runny dough" into the prepared 8" round cake pan. Cover the cake pan with a shower cap or plastic wrap.
- Let it rise until doubled in volume. I like to use my microwave for this (turned off). Place the cake pan with the dough in the microwave and place a cup of very hot water next to it. Close the microwave oven door and let it rise in that warm and moist environment for about an hour.
- Gently brush the risen dough with the egg wash and sprinkle with the seeds, if desired.
- Bake the bread on the middle rack in a preheated 400 F oven for about 15-20 min until golden brown.
- Removed the baked bread from the cake pan and let it cool completely on a wire rack. Cut it into wedges and enjoy!
